HAPPY ST PATRICK'S DAY!

As it’s the national day of celebration in Ireland, we’ve collected some tasty traditional recipes for you to get stuck into this weekend. Don’t be afraid to get your hands dirty with these delicious dishes perfect for getting the family together.

Soda Bread

What you’ll need:

  • 2 cup all-purpose flour
  • 1⁄2 tsp salt
  • 1 tsp baking soda
  • 1 cup buttermilk

Irish Soda Bread

A delicious and filling treat for waking up in the morning.

What you’ll do:

  • Preheat a flat griddle pan on a low/medium heat
  • Add your flour and salt into a bowl and sift in the baking soda, making a well in the centre and pouring in your buttermilk.
  • Mix the dough quickly and knead lightly on a well floured surface. With your hands, form into flattened circles about ½ inch thick and cut into quarters with a floured knife.
  • Sprinkle some flour over the base of the hot pan and cook the farls for about 6-8 minutes on each side, until golden brown.
  • Serve up with a morning fry!

Irish Stew

It’s warm, welcoming and hearty, packed with nutritious vegetables to fill your belly and content you for the rest of the evening. The perfect dish for a family gathering.

Irish Stew

What you’ll need:

  • 2 tbsp rapeseed oil
  • 1kg lamb shoulder, trimmed and cut into 2.5cm chunks
  • 2 onions, peeled and roughly chopped
  • 3 celery stalks, trimmed and sliced
  • 1 bay leaf
  • 4 large carrots, peeled and roughly chopped
  • 1 litre beef or lamb stock
  • 900g potatoes, peeled and cut into 1cm slices
  • Good knob of butter
  • Sea salt and ground black pepper
  • Slices of white bread, to serve

What you’ll do:

  • Get yourself a large casserole pot and place over a high heat, adding 1 tablespoon of oil. Chop your lamb into pieces and brown in the pot. Remove the lamb, drop your heat and add another tablespoon of oil. Fry your onions, celery and carrots for around 6 minutes until the onion has browned and softened.
  • Preheat the oven to 160°C /325°F/Gas Mark 3.
  • Bring your meat back into the pot and add the bay leaf and stock. Add some salt and pepper to season and bring to the boil. Remove the pot from the heat and push the slices of potato down into the stew, adding some butter on the top and season again if desired.
  • Cover the pot and put into the oven. Cook for 1.5 hours or until the meat is tender. Remove the lid and cook for a further 10 minutes.
  • Serve up!
Irish Coffee

Irish Coffee

The best thing to top off a full belly (followed by a nap)

 

What you’ll need:

  • 2 tbsp double cream
  • 150ml freshly brewed black coffee
  • 50ml Irish whiskey
  • ½ – 1 tsp brown sugar
  • Pinch of freshly grated nutmeg

What you’ll do:

  • Whip the cream lightly so it has slightly thickened, set to one side.
  • Pour the hot coffee into a mug or heatproof glass, then add the sugar and whiskey. Stir this until the sugar has dissolved fully.
  • Gently float the cream on the top and sprinkle over your nutmeg. Serve hot.

Unfortunately, this weekend it would have been the latter. Roll on the Rugby World Cup!”
